Toss your bite-sized chicken pieces with Italian seasoning, paprika, a generous pinch of salt and freshly cracked black pepper. Make sure every piece gets coated you are building flavor from the very first step not trying to rescue it at the end

Step 2: Brown Your Chicken

I failed at this step the first time by rushing it. Here is what I learned

Heat your olive oil in a large pot over medium-high heat. Add your seasoned chicken in a single layer do not crowd the pot or it will steam instead of brown and you will miss all that gorgeous golden color that adds flavor to everything..

Cook for 3-4 minutes per side until golden brown on the outside. It does not need to be cooked all the way through yet it goes back into the pot shortly. Remove it and set it aside on a plate. Your pot now has all those beautiful golden brown bits on the bottom. Do not wash it. Do not wipe it. Those bits are flavor gold and the next step captures all of them

Step 3: Cook Your Aromatics

Reduce the heat to medium. Add your diced onion directly into the same pot no extra oil needed, the chicken left enough behind. Cook for about 3-4 minutes until the onion softens and turns translucent, scraping up all those golden bits from the bottom of the pot as you stir

This is called deglazing and it is one of those small moments where home cooking tastes genuinely restaurant quality. Add your minced garlic and cook for another 30-60 seconds until your kitchen smells absolutely incredible. Warning: do not walk away during the garlic step. It wilts within about 60 seconds in the residual heat no extra cooking needed. Taste your sauce. Does it need more salt? More pepper? A little more Parmesan? Adjust it until it tastes exactly right to you

Ladle your creamy chicken pasta into bowls while everything is hot and at its creamiest. Scatter fresh parsley generously over the top. Add an extra snowfall of freshly grated Parmesan. Crack some black pepper over it. Sit down. Eat it while it is hot. And notice there is only one pot in your sink
